What is fully clad cookware?

Over the years there have been advances in the way cookware is produced, in the beginning it was all made out of cast-iron and it quickly developed into steel pots and pans. However as steel conducts heat less efficiently than cast-iron or even aluminum the invention of having a good heat conduction metal inside the steel pots and pans came to life. Today, we have modern cookware that features a layer of steel on the outside and various metals that are good heat conductors inside the core of the cookware. Metals like aluminum and copper are often used for this purpose.

Fully clad cookware, is made with a inside of copper or aluminum that is covered by steel. That it is “full clad” means that the inside of the good heat conducting metal is not only at the bottom of the pan as is often the case with cheap cookware, but upside the walls of the pot as well. This provides superior heat conductivity, that effectively transfers the heat to the food that you are preparing. It is an expensive process, so often when you opt for full clad cookware you will have to pay for this extra feature in the way of a higher price for the cookware set.
